The Deep End
Prince Philip, Duke of Edinburgh, once said "If it has four legs and is not a chair, has wings and is not an aeroplane, or swims and is not a submarine, the Cantonese will eat it." He has a reputation for making offensive statments, though that one, far from overstating a stereotype, is actually a bit limiting. The Cantonese themselves claim that "Any animal whose back faces the sky can be eaten." (thanks, Wikipedia.)
The intrepid authors at Deep End Dining test that claim. And then they write about it beautifully.
